However, for the same reason you pointed out, it's really not in-character for Rosalie to say those lines. My only question regarding your theory is- why would we be hearing their thoughts, even through Edward?

Twilight is Bella's story, and she's the only narrator Why they would slip in something only Edward could "hear" doesn't quite make sense in that regard. And if it really were Esme's thoughts, Edward would have heard so much more than just hers. I'm sure Rosalie would be thinking daggers at Bella.
