When she visited the home of her friend Vera a week before her wedding to Royce, however, Rosalie was shocked to find herself experiencing jealousy for a change.
When Vera's husband kissed her, Rosalie noticed how passionate their marriage was and immediately realized that her relationship with Royce lacked that level of love. She also envied Vera for her adorable baby boy, and suddenly recognized her own desire to start a family. Unfortunately, since she became a vampire immediately after that visit, she never got the chance to have a child of her own.
While walking home following her visit to Vera's house, Rosalie heard someone call her name. She proceeded to walk towards a group of men, which turned out to consist of Royce and his friends. She was already a bit shaken by her thoughts about her loveless relationship, so when Royce started bragging to the group about his fiancee's incredible beauty, Rosalie struggled to play along.
This upset Royce, and prompted him and his equally inebriated friends to take advantage of her and then leave her in the streets to perish.
The men laughed as they walked away from her nearly-lifeless body. Since Rosalie was covered in blood, she luckily attracted Carlisle Cullen, a vampire doctor who didn't feed on human blood.
Without taking time to really consider the ramifications of turning Rosalie into a vampire against her wishes, Carlisle carried her to a room and began her transformation. When Rosalie's pain finally started to subside, she was happy because she thought she was finally passing away, but then she felt something sharp cutting her throat, wrist, and ankles. Carlisle held her hand and explained that she was becoming a vampire. Rosalie was initially too shocked to decide if she grateful that Carlisle saved her, but she later resented him for denying her the opportunity to determine whether or not an immortal life was something she even wanted.
She eventually found as a vampire, but it's still unclear if she'd have preferred moving on to the afterlife that night.
Carlisle was one of the most gentle characters in the entire Twilight series, and his refusal to hurt others prompted him to learn to control his vampiric impulses and solely consume animal blood. Carlisle believed that all human life was sacred, but his morality actually wasn't his primary motivator when it came to saving Rosalie. Edward spent the first several years of his life as a vampire depressed and lonely, and Carlisle hoped to brighten his spirits by finding him a mate. When he found Rosalie bloody and beaten in the streets, he saw an opportunity to provide his adopted son with a beautiful companion.
Unfortunately, Edward wasn't too thrilled about being set up in such a way, and he and Rosalie didn't quite work out how Carlisle planned. During Rosalie's transformation, she overheard bits of Edward's complaints to Carlisle about the doctor's quick decision to turn her into a vampire. Rosalie learned that Carlisle had hoped she could be Edward's mate, and even though she didn't have any feelings for Edward, she was furious that Edward wasn't thrilled by the prospect of being with her.
Rosalie's vanity needed feeding, and she never got over the fact that Edward wasn't attracted to her. When he finally showed interest in someone upon meeting Bella, Rosalie found herself resenting Bella and couldn't stop herself from being cold towards her. It didn't matter that she had her own mate—she wanted everyone to see her as the most desirable woman in their lives.

As for the second I do agree that the "logical" choice for the speaker is Rosalie, since everyone else is on-camera and no one there is actually talking. However, for the same reason you pointed out, it's really not in-character for Rosalie to say those lines. My only question regarding your theory is- why would we be hearing their thoughts, even through Edward?
Twilight is Bella's story, and she's the only narrator Why they would slip in something only Edward could "hear" doesn't quite make sense in that regard. And if it really were Esme's thoughts, Edward would have heard so much more than just hers. I'm sure Rosalie would be thinking daggers at Bella.
